Place the mandoline on a stable work surface. Use a folded cloth underneath if your surface is smooth to prevent slipping. Ensure the collection tray or bowl is properly positioned under the blade.
Adjust the knob or slider to your desired thickness. For carpaccio: less than 1mm. For gratin: 3 to 4mm. For roasting slices: 5mm and more. Do a test pass on a vegetable before starting the full preparation.
Always use the safety food holder to hold the vegetable — never slice with bare hands on a professional mandoline. Slide the food with a smooth and steady motion along the blade. Consistent motion ensures identical slices.
Rinse immediately after use with hot water and a brush or sponge — never run your hand directly over the blade. Dry and store in a drawer. Compact structure: it doesn't take up much space.
For round vegetables (tomatoes, beets, lemons), cut a thin flat slice off one side before slicing — this creates a stable base that prevents the vegetable from rolling on the blade. Result: perfectly uniform slices from the first to the last pass, effortlessly and without risk of slipping.
