- Grit 1000 next (or first) — for regular maintenance and finishing. It smooths and polishes the edge.
Place the magnetic holder on a flat, stable surface. Position the knife against the magnet, selecting the appropriate angle (15° for Japanese blades, 20° for European ones). The magnet holds the blade — you don't have to hold anything.
Slide the cylindrical roller along the blade, from heel to tip, in a fluid motion. The rolling does the work for you — without force, without excessive pressure. Repeat 5 to 10 passes depending on the blade's condition.
