The magnetic rotary sharpener maintains a constant angle â that's its great advantage. But this stability is only effective if the stone attached to it is perfectly adapted to the system. These diamond and sharpening stones have been specifically designed for this purpose: stable magnetic attachment, homogeneous surface, and a range of grits that covers the entire sharpening process.
Each stone is designed to fit perfectly with the rolling sharpener. Instant attachment, perfect hold throughout sharpening â no slipping possible.
Diamond plates for coarse to medium grits (biting edge and durability on hard steels), oxide stones for fine to ultra-fine grits (progressive and smooth polishing).
The design of the stones scrupulously respects the sharpener's geometry. No approximation, no angle deviation between sessions.

Over 15 grit sizes available, organized into four families. The golden rule: always start with the coarsest grit needed according to the condition of your blade, then progressively move up to finer grits. There's no need to go through all the grits every session â choose only those you need.
- Damaged blade or broken edge: start with 240-400, then 600-1000, then finish depending on your level.
- Regular maintenance (daily use): 600-1000 is sufficient. Add 3000 if you want more refinement.
- Expert polishing (Japanese knife, Damascus): 1000 â 3000 â 5000 â 8000 or 10,000.
- Quick refresh before use: 1000 grit only, 5 to 8 passes.
The principle of the magnetic rotary sharpener is simple: the stone rotates freely on its axis while you slide the blade along the abrasive surface. The angle is mechanically imposed â you just have to guide the movement.
The 3-step method- Step 1 â Choose the starting grit according to the condition of the blade (see table above). Attach the stone to the rolling sharpener.
- Step 2 â Create the edge: make back-and-forth movements, working both the ends (tip and heel) and the middle of the blade. Continue until you feel a slight metallic burr on the opposite side.
- Step 3 â Re-center and move up in grit: 2 to 3 light strokes on the other side to re-center the burr, then move to the next grit. Repeat until the desired finish.
For thick stainless steel knives (e.g., classic European chef's knife), aluminum oxide stones are preferable to diamond plates for fine grits: they work efficiently without risking premature wear of the abrasive on these "material-eating" steels. Keep diamond plates for hard steels (Damascus, carbon, Japanese HRC 60+) where they excel due to their biting edge and longevity.
The finer the grit, the lighter the pressure should be. From 3,000 grit upwards, simply let the weight of the blade do the work â excessive pressure would crush the micro-serrations you are trying to form.

Place the knife on the magnetic stand at the chosen angle (15° for your Japanese knives, 20° for your European knives). Roll the sharpener back and forth along the blade - the magnetic positioning automatically maintains the perfect angle. Start with 400 grit to restore the edge, finish with 1000 grit for the final polish. Razor-sharp results in just a few passes.

It is compatible with all smooth-bladed knives: chef's knife, santoku, nakiri, gyuto, utility knife and paring knife, stainless steel or carbon. Serrated knives and ceramic knives are not compatible. (For ceramic knives, please refer to other manual sharpeners or electric knife sharpeners)
A 15° angle is the ideal sharpening angle for Japanese knives (santoku, gyuto, nakiri) or premium European knives with a thin blade - it provides exceptional cutting fineness. A 20° angle is suitable for classic European knives for a robust and durable edge. Using the wrong angle gradually damages your blade's edge, hence the benefit of a rotary sharpener with fixed angles.
Drag the blade across a sheet of paper - it should cut cleanly without tearing. You can also test it on a tomato without pressing: a well-sharpened knife will sink in effortlessly. If the blade slides or tears, go over it once with 400 grit and then finish with 1000 grit. Note: with basic European knives, it will sometimes be impossible to achieve this result, the goal being to get as close as possible!
