Each grit has a specific role in the sharpening progression. The golden rule: always start with the coarsest grit needed, then gradually move to finer grits. There's no need to go through all grits if your blade is still in good condition.

How to use your sharpening stone? The 4-step methodStone sharpening relies on three successive phases: creating the edge, centering the burr, then gradually polishing. Here's the complete method, from soaking to mirror finish.
Immerse the stone in cold water for 5 to 15 minutes before use. Water acts as a natural lubricant: it washes away steel particles (sharpening slurry), protects the stone's surface, and preserves the blade's edge. During sharpening, regularly add a few drops of water to the surface.
Place the knife flat on the stone at the desired angle (generally 15° to 20° depending on your knife). Make back-and-forth movements, working on the ends (tip and heel) as well as the middle of the blade — the ends are often neglected. Continue until you feel a slight metal lip (the burr) with your thumb, moving from the spine towards the cutting edge, on the opposite side. This burr indicates that the edge has been created.
Once the burr is detected, flip the blade and make only 2 to 3 light passes on the opposite side. No more — if you press too hard, the burr will flip to the other side, and you'll be endlessly repeating the process. The goal is to stabilize the edge perfectly in the center of the blade.
Move to finer grits (1,000, 3,000, 6,000) repeating at each step: a few passes, burr detection, recentering with 2-3 strokes. The finer the grit, the lighter the pressure should be. At 6,000, your blade achieves a mirror polish and a razor-sharp edge - test by cutting a hair or slicing a sheet of paper without resistance.
- Rinse the stone with clean water to remove sharpening slurry.
- Wipe with a clean cloth and air dry before storing.
- Never store a damp stone in its case — risk of mold.
- If the surface becomes smooth and slippery, flatten it with a flattening stone (or on sandpaper attached flat).
Maintaining a consistent angle is key. Regardless of the grit used, if the angle varies from one pass to the next, you will never create a clean edge. Beginner? Use the angle guide provided with the stone to help you maintain a stable position.
For thick and robust stainless steel knives, the aluminum oxide stone is particularly suitable: it works effectively without wearing out its abrasives too quickly, unlike diamond discs which can wear out prematurely on these "material-eating" steels. For Damascus or very hard carbon steel blades, both methods work — choose according to your skill level and the time you want to spend.
