Thanks to the integrated angle guides, you don't have to manually maintain any angle. Insert, pull, repeat — the sharpener does all the work.
- Very dull or damaged blade: start with 120# grit (coarse diamond), follow with 600#, finish with 1000# ceramic polishing.
- Regular maintenance: 600# grit only, then ceramic polishing. 120# grit is not necessary.
- Simple refresh: 1000# ceramic polishing alone is enough to restore a decent edge.
- Ceramic knife: use only the ceramic honing unit (polishing only) — never the diamond discs.
Place the sharpener on a flat surface. The non-slip base ensures total stability. Plug in the device and choose the starting grit according to the condition of your blade.
Place the knife in the entry guide of the first slot. The 15° angle is maintained automatically — no need to calculate it or hold it by hand.
Slide the blade towards you in a slow, steady motion, from heel to tip. Without excessive pressure — the motor does the work. Repeat 3 to 5 times per slot.
Always finish with the 1000# ceramic slot for the final mirror polish. Test on a sheet of paper: the blade should cut without any resistance, cleanly and silently.
A 15° angle makes the blade extremely sharp but also more delicate. Reserve this sharpener for your precision knives (sushi, julienne, fine slicing, high-end thin-bladed European knives) and keep a 20° calibrated sharpener for your butcher's cleavers, boning knives, or more robust camping knives.
For Japanese knives: this electric sharpener is compatible and will yield good results. However, it removes more material than a whetstone or a magnetic rotary sharpener would, and the motor's micro-vibrations can, in the long term, weaken very hard steels (HRC 62+). For intensive use or very high-end Japanese blades, the whetstone remains the absolute benchmark. This sharpener is an excellent practical option — fast, no skill required — but not the optimal choice for daily use on exceptional Japanese blades.
