Preliminary step: choose your grit- Grit 400 first — if your knife is very dull or damaged. It reshapes the blade's bevel.
- Grit 1000 next (or alone) — for routine maintenance and finishing. It smooths and polishes the edge.
Place the magnetic stand on a flat, stable surface. Position the knife against the magnet, selecting the appropriate angle (15° for Japanese blades, 20° for European). The magnet holds the blade—you don't have to hold anything.
Slide the cylindrical roller along the blade, from heel to tip, in a fluid motion. The rolling action does the work for you—no force, no excessive pressure. Repeat five to ten passes depending on the blade's condition.
Test the sharpness on a piece of paper or a tomato skin. The cut should be clean, fluid, effortless. If necessary, make a few more passes with the 1000 grit for finishing.
For a "razor-sharp" result, always respect the grit order: start with 400 if the blade is very damaged, then always finish with 1000 or finer. For a very dull or slightly chipped blade, start with 400 grit and allow five to ten minutes. The actual time depends mainly on the starting condition of the edge, not your skill: since the angle is fixed, a beginner takes the same amount of time as an experienced user.
What is the difference between this sharpener and a honing steel?
These are two different and complementary actions. A honing steel hones: it straightens an edge that has been micro-deformed during use, without removing material. The rolling sharpener sharpens: its abrasive diamond discs abrade the steel to recreate a new edge on a truly dull blade. A honing steel will never save a knife that no longer cuts. In practice, you use a honing steel weekly and sharpen a few times a year.
Should the diamond discs be wet?
No. Diamond discs are used dry, unlike sharpening stones which require prior soaking. No liquid, no oil, no preparation. After use, simply wipe the disc with a dry cloth to remove metal particles. Also dry your blade before storing it: residual moisture, not sharpening, damages a knife in the long term.
Do the discs wear out, and can they be replaced?
Diamond discs wear out slowly, much slower than a stone. For normal household use, expect 6 months to 2 years before noticing a decrease in cutting ability. They are replaceable, and a complete range of additional discs is available separately, from 240 grit for repair to 10,000 grit for a mirror polish. So you can upgrade the tool according to your needs without buying a new body.
Can it be used on serrated knives, scissors, or ceramic blades?
No, and we prefer to state it clearly. Serrated knives have teeth where each hollow must be worked individually, which a flat disc cannot do. Scissors require sharpening on only one side of the bevel, with a dedicated tool. Ceramic blades require a specific diamond abrasive and very controlled pressure. This sharpener is designed for smooth steel blades: chef's knives, Japanese, utility, santoku.
